Marinated Oriental Style Asparagus

This recipe will surely be a family favorite after

you make it for the first time! Spring brings us an

abundance of Asparagus, and this recipe

using some Asian flare is simple to make tasty

and nutritious to eat.

 

Ingredients:

1 lb. asparagus washed well and cut into 1-1/2 inch pieces

1/3 Cup soy sauce

½ to 1 teaspoon sugar (I use about 1/8 teaspoon of Stevia, or you could use a little honey)

1 teaspoon toasted sesame oil

1 Tablespoon fresh peeled and chopped ginger

1 Tablespoon toasted sesame seeds (just brown in a non-stick pan, watch careful or they’ll burn)

1 clove garlic pressed

• Mix all the ingredients above (except sesame seeds and asparagus) in a small sauce pan until the sugar is dissolved, if not using sugar then just heat until warmed. Then set aside in a large bowl.

• In a medium sized pot with a lid, place about ½ inch of water in the bottom, put a metal steamer basket inside and place the lid on top. Once the water comes to a boil, put the asparagus inside and put the lid back on. Allow this to steam for just 7 minutes.

• After the 7 minutes, immediately remove the lid and take the steamer basket to the sink and rinse in cold water. Next, put the asparagus on a clean towel and pat to dry. Dump the asparagus in the bowl of marinade and toss until all the asparagus is coated. Serve immediately with the sesame seeds sprinkled over the top.
